Vegetarian recommendations using a Le Creuset?

I recieved a Le Creuset dutch oven for Christmas (I think it is around 5 or 7 quarts), which is something I have wanted. I know it is supposed to be great for braising meat, but we are vegetarians. I know we can use it to roast vegetables and use for stove top soups, etc. I have looked on the Le Creuset website and they have limited vegetarian recipes.

This is such a kitchen savvy group, I thought I would ask if you have recommendations. I look forward to your input. {#emotions_dlg.biggrin}
