Last Sunday, DH and I were busy all day putting up our fall decs. By about 7pm, I realized we hadn't had dinner and nothing was planned. I remembered I had purchased some soup greens to make soup, but I didn't have any meat to use. Anyway, in the span of about 15-20 minutes, I had the most delicious vegetable barley soup EVER. The broth consisted of a container of Rachael Ray beef broth and a can of crushed tomatoes. My new pressure cooker is looking like its going to get a lot of use this year.
