I didn't shop for my corned beef until last Friday, and I was disappointed to find that there was no low sodium corned beef at my local A&P, so I bought eye round corned beef, which looked lean and was the lowest sodium listed. (I posted about it on the longer "corned beef" thread).

I cooked it in my largest crock pot all day yesterday, and refrigerated it overnight. This morning when DH sliced it he said it was the best tasting corned beef he'd ever eaten!

Since it's really for his birthday dinner I was very surprised, but another thing that pleased me was that there was so little shrinkage with this meat. I usually buy 3 or 4 of the briskets and they shrink to half their size before they're cut. There was also SO much less fat on these.

I paid about $2/pound more for these but it looks like maybe it was worth it to buy them. I think I'll look for them next year!
