Hi Panda, I totally agree Smiley Happy

I remember those old dry mixes from years ago... they are nothing like TJoes.

I also picked up the TJoe's banana bread mix to make for my daughter and the pumpkin bread mix just to have on hand for when I know someone will be stopping by the house.

Noel, I think you have convinced me to try one of their baking mixes . . . me and baking, ooooh not so much but I think I will give one of them a whirl next time I am there! . . . Smiley Happy

And sincere thanks to those that have posted how they change up these recipes!

You go, girl!  Woman LOL  They are delicious, and really easy.

I forgot to mention, DD added rum soaked raisins to the gingerbread, her father LOVES raisins.  I taught her how a long time ago: put raisins in a small bowl, add rum or bourbon or whatever, depending on amount of raisins.  I usually just do about a tablespoon.  Put in microwave for a little bit, less than a minute, and let sit for awhile until they cool.  Feel free to drink strained "juice" Woman LOL

Re: Trader Joe's Gingerbread Mix

I've tried TJ's brownie mix, cornbread mix, pumpkin cornbread mix, and pumpkin bread mix and I've been happy with all of them.  I'm mostly a from-scratch baker, but I always keep a few mixes handy for when I'm pressed for time.  I will definitely pick up the gingerbread mix next time I'm in there.

I'm mostly from scratch, also, TG, but during the holidays I always keep a few TJ's mixes on hand.  Years ago I learned from a friend to always keep crackers, cheese and candles on hand for last minute guests.  Now I've added to the list Woman LOL

I buy their baking mixes all the time, mtc.

I bake the pumpkin cornbread in either my Nordic Ware acorn pan or my Lodge cornstick pan...but they are great even in a squate pan too!

The spices TJs adds really make a difference, IMO...they almost taste made from scratch.
