Trader Joe's demo yesterday was for a delicious salad. I bought the ingredients and we had a delicious lunch using this recipe.

The base is a package of their "Healthy 8 Chopped Veggie Mix", which consists of cut small bite-sized pieces of broccoli, carrots, green cabbage, red cabbage, jicama, green bell pepper, radish, and celery.

They added TJ's English Cheddar with Caramelized Onions also cut in small bite-sized cubes.

And then TJ's 50% Less Salt Roasted and Salted Whole Cashews.

The ingredients were combined and dressed with TJ's Reduced Fat Cilantro Salad Dressing.

The veggie mix is said to be 5 servings, but I treated it as 4 servings. I added approximately 1/4 c of the cheese, cubed, and 1/4 c of the cashews, Then I lightly dressed it with the cilantro dressing. (I served it with some cottage cheese - for the protein - and a slice of plain toasted sourdough bread -- really a nice combination, imo.

The flavors are amazing, quite different, and there's quite a variety of texture. I had been using and enjoying the cilantro dressing for quite awhile now, so was anxious to try it this way.

For those of you who don't have access to Trader Joe's, I apologize. I doubt that this salad could be duplicated without their products!
