Re: Tomorrow's Dinner Is Done, Yeah!

We love Rao's sauce, but it is SO expensive here in Hawaii. We buy it when it is on sale at Costco.  At least we can get it in a two-pack.  At the grocery store it is ~$15 for one little jar.

@QVCkitty1  I love making soups/stews, chili  etc. and using the crockpot.

I made a sausage tortellini soup last year that we loved. Now, it is a matter of finding the exact recipe I used. I got it off the internet (umpteen variations) and don't remember the site.  That was a great soup.

If you find the recipe please post if you can. Not soup but really good, your post reminded me of a Geoffrey Zakarian cavatappi pasta, italian & chorizo sausage and kale one pot dish. Its online under Food Network.  Have made it several times & it's great.

@rockygems123   I will post the recipe if I find it.  It makes me mad I just didn't stick it with my cook books.

I know what you mean. I regret not saving a very simple tortilla soup using ground beef from many years ago.

As we are only two people what DH cooks on Monday is good re-heated on Tuesday and often there is still some for a lunch.  Many things are better the next day, people who won't eat left-overs are missing some good tasting meals.  He cooks again on Wednesday and that usually takes care of Thursday unless we have Cod or Salmon and that only takes care of one day.  Not a lot of cooking as a little cooking goes a long way around here.

Fri or Sat we often get a pizza or eat eggs for dinner or eat out one of those days.  Always eat out Sunday and either Fri or Sat.

Actually we had Crockpot stew last week and we ate that for 3 days it was so good and there was so much of it.  If he makes a soup with fish, potatoes, carrots, onions and condensed milk, there is so much of it we will eat that for 3 days or 2 days and a lunch.

KathyM23.......how do you make Crockpot Stew.......Do you use sweetened condensed milk ?

I certainly do! I'm like you. I don't like to stress about it & try to figure out what to eat that day. I watch my little grandson 3 days a week, so I especially make sure I have meals ready to go on those days.

We used to like Rao's best until we discovered Yo Mama's Marinara!  It is now by far our favorite.  We think it tastes fresher and lighter and it has a lot less salt.

In the warmer months, I do a lot of salads and things that you don't make ahead. Now that it is cooler, I will do soups , sauces , chili, etc.  I love having food in the freezer that I just have to nuke.

@QVCkitty1 I'm the same. In summer, it's often salads, sandwiches and fresh fruits and vegetables. Today is rainy with a high of 62 so I made a pot of chicken tortilla soup. With just two in the house, we'll get three meals out of it. That can be the downside, but we don't mind leftovers for the next day. The upside is I spend less time in the kitchen when I cook ahead.
