I just made rum balls for the first time, and they turned out grainy, not smooth. I couldn't roll them into balls as the recipe called for, I had to squish them into balls instead. Are rum balls supposed to have a grainy texture or a smooth, creamy texture? Thanks.

Does your recipe call for cookie crumbs and nuts?  If so, they need to be crushed fine.  I put the nuts and cookies in a food processor and process them.  Occasionally, I will l leave nuts a bit chunky for texture.

 

Mine go together smoothly and are easy to roll, but I wouldn't describe them as creamy.  There are definitely course pieces of cookies and nuts in there.

 

Maybe you need a tad more of the wet ingredients in yours if they are too dry.  It sounds like they might be.

Yes, I used walnuts and vanilla wafers. I did use a processor to grind the walnuts, but not the vanillla wafers. My DH used a rolling pin and plastic bag to crush those. Thanks for the input. The good news is, that despite the texture, they taste good.

When I had a problem one time rolling I discovered that adding more rum helped.  Lol!

Grind it all up, add MORE rum.  Sprinkle with powdered sugar.  The rum will turn that dark, so sprinkle again later with sugar.

 

They do need to be sort of "wet."

Once I ate more than a few early in the morning while creating a cookie tray for work.  Trust me when I tell you you can get buzzed on them quickly, especially on an empty stomach.

 

I made rum and bourbon balls this year.  I am making a cookie tray for my DH to take to work on Thursday.  No booze cookies for them.  He works in law enforcement and I don't think it would be a good idea.
