I stuff mushrooms with leftover dressing and sprinkle with grated parm , can't wait !

I made a 22 lb turkey.  The only leftovers I have is cranberry sauce.  I gave away quite a few dinners this year.  Oh, I have pie too.

@Kachina624   Well, you either make or buy a pie crust.  You can use one crust on top or one top and bottom.

 

You take cream of chicken or mushroom or even celery soup, about half a can or more depending on the size of the pie, then add liquid (milk or some leftover gravy and   even a little wine or spoonful of sherry) to thin it a little.

 

 You put that in a pot, heat it gently and add  mixed veggies that you like, and heat enough to thaw and almost cook the veggies if fresh or frozen, and then add lots of good bite sized turkey pieces.  Add Italian herbs if you like, a little garlic or whatever you are craving at the moment--even hot sauce. 

 

You let that cool a little and then put in the pie shell and bake at 350 to 375 until the shell is done and golden brown.

 

Sometimes we put a couple of teaspoons of sherry in the liquid.  You can make a cream sauce from scratch but frankly I'm not sure it adds that much to the endeavor.  

 

Use any vegetables you like, including drained leftover green beans or peas or carrots.  My favorite is plain old frozen mixed vegetables or even canned in a pinch. 

 

It is a very casual, easy, comfort food of the highest order!  

 

Easy being the key word!  Oh and you can freeze these either cooked or raw.  We have even put them in frozen and cook a little longer until done.

 

It is a great way to deal with leftover chicken or turkey and other leftovers and pantry items.  There is no real recipe--it is a very loosey goosey thing (although we have never used goosey in the filling!).

@Sooner. Thanks!  I'll save your directions f o r the next time I find myself with some excess turkey or chicken.  I didn't cook one today.
