1) Recheck your ingredients (go back to your recipe to make sure you didn't forget one and that you added the right amount).

 

2) Set ingredients out (before you start making the dish - you'll save a lot of time and you'll know if you have enough of what you need).

"Don't drink wine" while you're using a sharp knife is my rule.  Other than that, I enjoy cooking with wine.  Sometimes I even put it in the food!
