Re: Sweet potatoes

[ Edited ]

The only time I've seen a frozen sweet potato product other than sweet potato fries was about a year ago.

Was in the local Safeway grocery store and saw frozen Birds Eye "Steamfresh" sweet potato chunks  in the same type of  plastic microwave-safe steamer bags as you usually find peas or corn .

I bought two bags of the cut-up cubes of sweet potatoes but have never found them since then.  The corporate website indicates they are still sold, however, and even has some recipes for using them.

We usually just wash, then rub whole sweet potatoes with oil, place them in a small foil-lined metal baking pan, and bake 60-90 minutes at 350 or 400 degrees, until they are so soft that they almost are melted.  Just add a little salt and butter.

Years ago (many) I used to buy the Stouffers w Apples it was great! Now I make a large tray of them and freeze. I get to enjoy them all year long.

I dice them not mashed.
