DH and I will have this:  1 lb. Velvetta cheese, chopped into pieces; 1 can refried beans; and 1 can Ro-tel diced tomatoes and green chilies, undrained Put everything in a microwave-safe bowl, cover, and microwave about 6 minutes or until cheese is completely melted. Stir and serve with tortilla chips.  Smiley Happy

It just all went by so fast.  For me the holiday season is Halloween up to the final second of the Super Bowl then onto August. 

 

I plan on doing chili dogs, wings, and rotel dip for the game but for the night before like @JeanLouiseFinch I plan on finishing the Christmas meat in the freezer.  Mine is leftover Greenberg's Smoked Turkey and will do a few of the sides in small portions. 

 

It as been decades since my Cowboys brought me true Super Bowl joy. Woman Frustrated

I got this dip recipe when a guest speaker came to my classroom from the Tones spice company.  It isn't very attractive looking (add shredded cheese as a topping), but it tastes great. 

 

TONES TACO DIP

1 lb ground beef, cooked and drained

 

Mix together and let sit for 10 minutes, then stir into beef.

1 envelope Chi-Chi's taco seasoning (no red stuff)

1 8 ounce can tomato sauce

1 tablespoon dry onion flakes

1 tablespoon dry green pepper

 

Stir in 1 can cheddar cheese soup, undiluted.

 

Serve hot with taco chips.

Thank you for all your coments and recipes.  I don't intend to make a dip with spinach.  I am looking for someone who can tell me what cocktail sauce you put on a block of cream cheese.  I savored this years ago and can still remember it but not the sauce.

@chessygal  I like to make this recipe for cocktail sauce:

 

2 1/2 tsp prepared horseradish

2 tsp dark brown sugar

1/4 tsp lemon juice

3/4 cup ketchup

 

 

If you would rather go with a prepared product, I find that Bookbinder's is the tastiest.

@chessygal  I found this recipe. Looks like you just need to purchase a jar of the usual cocktail sauce which is sold at most grocery stores

 

Super Easy Shrimp & Cream Cheese Appetizer

You truly won't believe something this easy tastes so good! Pair this super easy Shrimp & Cream Cheese Appetizer with crackers for a totally tasty party or snacking dip.
 
 

ingredients:

  • 1 (8 oz.) block cream cheese or Neufchatel 1/3-less fat cream cheese
  • about 1/2 c. cocktail sauce
  • about ½ lb. cooked small or medium shrimp
  • small sprinkle black pepper
  • chopped fresh parsley {optional}

instructions:

 

  1. If desired, coarsely chop shrimp. {I leave mine whole unless they’re larger than bite-sized.}
  2. Place block of cream cheese on a small serving platter. Pour cocktail sauce over the center of the cream cheese and top with shrimp. Sprinkle with black pepper and chopped parsley.
  3. Serve with crackers.

Here's another dip recipe that looks good from Trisha Yearwood

 

Charleston Cheese Dip

 

Trisha's Charleston Cheese Dip

 

Ingredients:

 

1/2 cup mayonnaise
One 8-ounce package cream cheese, softened
1 cup grated sharp Cheddar cheese
1/2 cup grated Monterey Jack cheese
2 green onions, finely chopped
1 dash cayenne pepper
8 butter crackers, crushed, such as Ritz
Corn chips, crackers or bagel chips, for serving

Directions:


Preheat the oven to 350 degrees F.


In a medium bowl, mix the mayonnaise, cream cheese,
Cheddar cheese, Monterey Jack cheese, green onions
and cayenne pepper.

 

Transfer the mixture to a shallow
baking dish, such as a 9-inch pie pan.

 

Top the mixture with the cracker crumbs and bake
until heated through, about 15 minutes.


Remove the pan from the oven and top with the bacon.

 

Serve immediately with corn
chips, crackers or bagel chips.

I use cream cheese spread (not whipped) so it's softer than a block, then add (use a mixer) 1 teaspoon dry onion, 1 teaspoon lemon juice, and 1 teaspoon Worcestershire sauce.  I spread that in the bottom of a CorningWare pie plate.  For the topping I use 1 can of tiny shrimp (drained) and 3/4 cup Heinz Cocktail Sauce.
