Oven-baked Beef Stew

3 TBSP. oil

2lbs. beef stew meat

1/3c. flour

1 tsp. salt

1/2 tsp. garlic powder

1/2 tsp. oregano

1/4 tsp. black pepper

1 (14.5 oz.) can whole tomatoes, undrained, cut up

1 (10.5 oz.)  can condensed beef broth (Campbell's soup brand is what I use)

2c. peeled, cubed potatoes

1c. celery, thinly sliced

4 medium carrots, sliced

3 small onions, quartered

1 bay leaf

    Heat oven to 325Ā° F.  Heat oil in ovenproof Dutch oven over medium heat until hot; brown beef.  Add flour, salt, garlic powder, oregano & black pepper.  Stir in tomatoes, & beef broth.  Bring to a boil, stirring frequently.  Add remaining ingredients; mix well.  Cover.

Bake for 2 hours or until meat is tender, stirring twice during baking.  Remove bay leaf & serve.

Wonderful suggestions!

 

I've decided on pot roast.. and remembered that I promised 2 dozen scones for my crochet group tomorrow night, so it should smell pretty good around here by afternoon.

NOTE: Do not be tempted to double the sauce recipeā€¦I sincerely thought about it. There is plenty of sauce when you take it out. It wonā€™t seem like it when you add the ingredients, but there will be plenty when you take it out.

2-3 potatoes, peeled and quartered

8-10 baby carrots

1 onion, quartered

2-3 Lb. beef chuck roast (I use)

1 soup can cream of mushroom soup

on top of all that, 1 1/2 oz. pkg onion soup mix

 

That's what I use.

Brown roast, both sides, arrange vegetables in the slow cooker, place roast on top. Spread soup over roast; sprinkle with soup mix.

Cover and cook on low 9-10 hours.

 

No water added.

I serve the Honey Garlic Chicken with garlic mashed potatoes, a steamed vegetable (peas, or corn, or cabbage, or asparagus, etc.), a tossed green salad and some warm rolls to sop up every last lick of that delicious sauce on each plate.  You could also serve it with/over rice or quinoa.

Peg Bracken's Stay A Bed Stew
Source : I Hate to Cook Cookbook
Servings : 6 

2 pounds beef -- cubed
1 cup carrots -- sliced
2 onions -- chopped
1 teaspoon salt
dash white pepper
1 can Tomato soup
1/2 can water -- use soup can
2 medium potatoes -- sliced
1 bay leaf

Place all ingredients in casserole dish. Cover and bake at 275 degrees F for 5 hours. Serve. OR place in slow cooker and cook on low for 8 to 10 hours, or until done.
