Anyone remember Uneeda Buscuit stuffing?

My mom used to make the best stuffing with these crackers.  Nabisco discontinued them a long time ago.

She used cubed potatoes, onions, sage was the main herb you could taste.  But the Uneeda crackers were the main ingredient for this delicious recipe.

If you're familiar with this recipe using these crackers, have you ever found a suitable substitute?

I was intrigued because I had never heard of or seen these crackers but apparently they are discontinued unfortunately but several people have recommended the following as a rather good substitute:

Goya Snack Crackers

I may try making something myself in place of the biscuit.  How hard can it be making a cracker?  HAHA
