Chana Masala! Here's a recipe my friend gave me, it's the first time making Indian food for me and I loved it.
1/2 teaspoon cumin seeds (optional)
4 large cloves garlic... I usually press my garlic that activates enzyme in it.
1 2-inch piece fresh ginger, peeled and coarsely chopped
1 medium onion, chopped (1-inch) (any red, white or yellow is good)
2-3 medium size tomatoes
6 tablespoons canola oil or any oil that you use
2 teaspoons ground coriander (optional for you lol!)
2 teaspoons ground cumin
½ teaspoon ground turmeric
1/2 teaspoon red paprika
2 ¼ cups no-salt-added canned diced tomatoes with their juice (from a 28-ounce can)
¾ teaspoon salt
2 15-ounce chickpea boiled
2 teaspoons garam masala
Fresh cilantro for garnish (optional) to can use any herb you like or skip it)
method:
Heat oil add cumin seeds, garlic and ginger. Add onions. And Statue it on medium heat. Then add tomatoes and salt and turmeric and red paprika. Cook it until it becomes sauce like consistency. Then add chickpeas and coriander powder, cumin powder and turmeric powder and cook, stirring, for 2 minutes. Reduce heat to slow maintain a simmer and cook, stirring occasionally, for 4 minutes. Add chickpeas and garam masala, reduce heat to a gentle simmer, cover and cook, stirring occasionally, for 5 minutes more. Serve topped with cilantro and lemon. Cilantro is optional

Was going through my excessively large collection of saved recipes, and it occurred to me that if you have a ham, you can stretch that hunk of pork into a lot of different things while confined at home.
I'm sure an online search could come up with a wide variety of recipes and ideas., such as............
Ham & noodle casseroles
Ham & cheddar/vegetable soup
Egg, hash browns & ham breakfast casseroles

@Sooner One of my favorite side dishes as a child was stewed tomatoes and rice Just canned tomatoes, onions, and some butter and let it cook for awhile. Some add okra but I can't abide okra. Then serve over rice. Good eating.

Also try quiche and fritattas! Ham goes great in them, and on a pizza with black olives and mushrooms! AND (guilty pleasure here--mayo warning!) ham salad for sandwiches!

French bread pizza - I need to use a tube of french bread in the refrig and also a jar of pizza sauce, frozen Italian sausage and a lot of shredded cheese
I seriously need to use up some Krusteaz pancake mix. Pancakes with bacon or sausage in the freezer.
Vegetable soup. I'll use some of those cans of corn, beans, tomatoes, carrots and broth, and add onions, that darned celery and a bunch of seasonings. While I'm at it, I'll make some corn bread muffins to go with it.
Potato soup....I have plenty of potatoes to use and of course all of that celery! LOL!
@jannabelle1 My husband made some wonderful whole wheat pancakes and we had leftovers. I put them in the fridge, then the next day we had a sort of egg, cheese and pancake McMuffin, and he had a sausage with pancake sandwich! We put a tiny bit of syrup on and it was great!
