Storing cheese

San Antonio had great TexMex, BBQ and steak. But other than these areas, it is a bit of a food waste land. There isn't a gourmet cheese store in the city.

There is not a gourmet cheese shop. I want to order some cheeses. They would need to be shipped FedEx. The size of the order doesn't really increase the cost of shipping. How long can cheese be kept in a standard residential fridge?
