We buy garlic shelled at Sam's club in a big bag. I will mince it all in my food processor and freeze in little snack baggies, 1 cup in a baggie. I keep one out in a glass container in the fridge. This works so well that I just wanted to share it with you all. I've been doing this for a few years now and will continue. It is so handy without having to take the shells off etc.

Thats a great idea! Sure would make a lot of recipes go much faster in the evenings. I remember Rachel Ray used to advocate mincing, then mixing with olive oil and storing in ice cube trays in the freezer. I could never do this because of room and the odor factor lol. Yours is much better in my book.💝🌸

I buy Wegmans peeled cloves. They're large, which I like, too. During the pandemic, these bags were sold out, and I was lucky enough to find them at Tops, too. I store them in the freezer.

I also store chopped onions, celery and herbs, chopped in the freezer, so handy. Also yellow, red and orange peppers. I use my Hamilton Beach Food processor a lot. It is so handy.. Left over chicken, I will chop with it and make a chicken spread with pickles and celery, too, for on top of bread for breakfast or whatever. Sometimes I have that in the freezer too, alone without the mayo in it. I'm almost 84 and I've been doing this for years. It makes it so much easier and faster when using. Anyone ever try blanching baby carrots and freezing them for future use? I may try that.

I have a mini ice cube tray I do this with. Silicone like this...$3 at Wally. Super easy to fit in the freezer. I put it in a 'banned' 2 handle grocery bag but leave it open. When frozen, I transfer to zip lock snack bags. I have never had a problem with odor.
I also do this w/ tom paste, chipotle peppers in adobe, etc.

Very smart! I wondered why Rachel never addressed this issue. Maybe she did as you. I do know, I really like the idea of having them frozen in the trays to pop in for sautéing and in sauces. Very clever to use this method for peppers and adobe.😃

It was outta necessity. DH is the biggest WHIMP on the planet when it comes to heat.
I have to mince any kinda peppers super fine...so once I open a small jar or can...it is easiest to do them all and then freeze the cubes.
Now I do lots of 'cubes'.
I must have read it somewhere....ha ha....

@RespectLife You bet! We're in Wegmans country. Buffalo is "Tops country," so we have a lot of those stores around here, too.
