Storing Coconut

How do you store coconut, and how long does it stay fresh?  I have a certain recipe that I use it in occasionally.  I've been storing it in the refrigerator but by the time I want to use it again I'm afraid it won't be good and end up throwing it out and buying more.  Would it be better to keep it in the freezer?  For how long?  I'd appreciate any input on this.  I seem to frequently be buying coconut when it probably isn't necessary.  I just buy the bags of flaked coconut.

I keep a bag of it in my freezer at all times. Sometimes it's in there for a year, or more, and I've never had a problem with it.

Also store my bags of flaked coconut in the freezer. Not unusual for them to be in there several years before I use them, since we are not fond of coconut.

If I am using it any time soon , I keep it in the fridge. If I am not going to use it, I also store mine in the freezer.

And what do you ladies do with coconut that is left in the bag, leftover from whatever your recipe needed? I have about 1/2-3/4 cup left and don't know what to do with it? I don't care for coconut, but hubby likes it, so maybe there is something I could add it to for him? Thanks for any suggestions.

I use coconut for my granola and other treats I make.  After I buy it I store it in the freezer, and once the bag is opened, I put it in a glass jar then back into the freezer.
