Spinach Pie

1 unbaked pie shell

1 lb. frozen spinach (I use a pkg. 10-12 oz.)

2 tbsp chopped onion

4 eggs

1 tsp lemon juice

¼ tsp salt

¼ tsp pepper

8 oz cream cheese

6 oz milk

8 oz grated Cracker Barrel Cheddar cheese (red label)

Thaw and drain spinach.

Blend other ingredients except ½ the cheese; mix with spinach and pour into pie shell

Bake at 375 degrees for 25 minutes

Put rest of cheese on top and bake another 5 minutes or until cheese is melted.
