I'm a Central FL native and that's exactly how i make them and the dumplings are rolled out really thin.On 1/23/2015 Haddie said:I cook dumplings all the time when my family is in. I use a biscuit recipe and make them into balls for the dumplings. I first saute a couple of chopped onions, a couple stalks of celery, with 2-3 cloves of minced garlic. Then, add couple of diced carrot sticks and chicken pieces (usually thighs.. because chicken breast is too dry). I add thyme, a little rosemary and 1/2 tsp of Italian seasoning.. a couple of bay leafs and .. we love lots of pepper too. After, the onions are the little golden, I add the organic broth and a few peas and cook until the carrots are soft and the chicken is done. I add milk and bring it to a boil turn it down and add the dumplings while it is still boiling and cook until they are done. It usually turns out well. I have used canned biscuits. But, watch out, because sometimes they fall apart. Then, it ends up like thick gravy. I do not know if it is the amount of leavening in it or what..
Haddie, that sounds really yummy but not like anything I have ever eaten in central Florida! When we make dumplings, it is usually just chicken, broth and dumplings with lots of pepper.

I hope not! I didn't care for it at all. Of course, as a life long freezing Northerner..I have never had the real thing and didn't know what to expect.
Hope to see some favorite recipes pop up here! I would love to try again!
There is no possible way a canned biscuit tastes like real chicken and dumplings. Blaspheme. LOL!

I have never had this dish, it looks beyond scrumptious! The trouble with these specialty, passed down, family dishes is I can never make it right going by a recipe. Never is as good as someone who knows the dish, and has made it forever!. I guess they know by smell, texture, and by looking at it if it is just right or done.
Recipes are pretty cut and dried. Someone needs to make a Heirloom or traditional recipe book that explains in detail every little step. How the dough is suppose to look and feel. The exact thinness or thickness. What they look like when done, etc.
I had very good luck with a traditional red beans/rice recipe. But it was very detailed.
Most stuff I just cook, and I am very good at it., But these traditional dishes, "heirloom dishes" I often fail.
I bought Nathalie Dupree's, Biscuit Cookbook. Her traditional cream biscuit recipe was written out step by step in detail. It was written on 2 pages, not in measurement form, but just someone explaining how to do it. I aced it. Make them all the time now, and they are perfect!

I always so enjoy reading what a dish means to someone, and how it differs in so many ways to so many people who lived in a common area of the USA, but so different from region to region in that common area........Such memories, and if only people would COOK real food, and add heart to meals again......

Most of my family love chicken and dumplings. Ugh, soft doughy and gross. LOL I know my Mother didn't roll them out she dropped them, they seemed huge and she always put a cover on and no one could lift the lid until they were done or they would fall. I'm the only one out of 8 that wouldn't eat them. My sibs still eat them all the time.
Now give me rivels in potato soup and that's another story. Love those.

This brings back memories. My mom made this for Christmas dinner each year. Chicken broth and dumplings rolled in thin strips with pieces of boiled chicken. Loved it.

I have a crock pot chicken recipe that uses refrigerator biscuits. We love it but it does have a different flavor from dumplings.
