If you click on the "More" button on the Curtis Stone HSN listing for the Sous Vide stick and scroll down a bit, you should see a link for the Product Manual. It's a 20-page PDF with all the details on how it works and precisely how to use it. There are several pages of recipes, too, and there's a general chart on cooking temps and times for chicken, pork, beef, and seafood at the end.
