I just bought mini cupcake bakers in silicone.  I'm going to make pecan tarts.  Is it necessary to spray them with cooking spray first like ordinary pans or are they non stick?  TIA

Silicone is nonstick; I've never had an issue with any of mine sticking.

@Patriot3.  I don't spray or grease any silicon. Be sure they're supported on a cookie sheet or something b on the bottom.

Oh I spray them---and that works very well. I have used silicone for years and whenever I don't use a spray, the stuff does not come out in one piece. I finally tossed most of them--they can get sticky and greasy and it is very hard to remove that residue.

I personally don't like cooking with silicone due to the odor absorbing smells it leaves.

I had the silicone mats for the cookie sheets and I threw them out because I never thought they were clean.  They did smell and were always sticky.

Update on the silicone trays....well I made 48 pecan tarts, had to throw them all out.  One of the trays I sprayed and one I didn't.

 

All the tarts  on the sprayed one burned on the bottom.  All the other ones did not get done on the bottom altho the pecans started to burn.

 

So much for trying something new.  Trays will be  donated.  Going back to the tin trays even tho it takes a day to get them clean.  When will I learn to stick with my old fashioned ways.  They were the best.  Thanks Mom in Heaven.

@Patriot3  so sorry the silicone mats did not work for you.  Have you considered, or tried using parchment paper on the tin cookie sheets?
