I have seen recipes online for sheet pan dinners and meals. There are even breakfasts. Has anyone made sheet pan meals and did they turn out good? They look very good in the recipes online!

I do a lot of "one pan meals" and this is just done in the oven rather than in a skillet.
In Florida, in the Summer, you do skillet, not oven! One of my favorites is Unstuffed Cabbage.

I’ve made several with chicken, and my teacher daughter makes them weekly with fish.

@Zhills - Could you please post your unstuffed cabbage recipe made in a skillet? I would like to make this. Here in So. Cal. we have had a very hot and humid summer so I don't use my big oven in this weather - just my stove top, Breville and Ninja. Thanks.

Not a term I'm familiar with. I'll have to look them up.

@WORKING GAL One with rice, one without rice!
Unstuffed Cabbage
Wilt cabbage wedges in boiling water in a separate skillet to speed cooking time. The wedges look very pretty served with the “un-stuffing.”
Brown ground beef, drain fat:
½ lb ground beef 1 lb
Add to pan & sauté til tender:
1 sm onion, diced small 1 lg
1 cl garlic, minced 2 cl
Add to pan:
14oz tomatoes, crushed 28 oz
drain (measure juice)
½ can Tomato soup 1 can
1tsp brown sugar 1 T
1tsp cider vinegar 1 T
¼ C uncooked rice ½ C
Add ground beef back to pan. Stir together.
Lay cabbage wedges on top.
Cover and cook until liquid is almost all absorbed.
Mixture should be moist when rice is done. About 20 mins.
Water can be added if needed.
Just as good if you throw it all in the skillet just chopped up!
Aunt Ruth’s Unstuffed Cabbage
Nobody makes stuffed cabbage as well as Aunt Ruth. This being said, she gave me this slightly modified version that is easier to make. The cabbage is not stuffed. Same taste, with less work. | ||||||||||||||||||||||||||
Crumble the ground beef into a 4-5 quart dutch oven or roasting pan. Add the chopped onions and cook over medium-high heat for 5-6 minutes, stirring often, until the beef is brown. Quarter and core the cabbage. Cut it crosswise in inch wide strips. You should have 8 cups. Add meat to the mixture. Cover and cook over medium heat for 5-7 minutes, stirring occasionally until the cabbage wilts. Stir in tomatoes, sugar, vinegar, and salt. Bring to a boil, reduce heat, cover, and simmer, stirring occasionally for 10 minutes, or until the cabbage is tender. |
Enjoy!

Fix them often for the 2 of us. Always have leftovers which are just as good.
Gave the sheet pan, rack, and sheet pan dinner cookbook to a young college couple for a shower gift and they loved it.

Ree Drummond seems to do a lot of "Sheet Pan Suppers" on Pioneer Woman, but not sure if the recipes are in her books or on her site. Hers always looks so tasty.
