Gotta do SOMETHING with all those leftover guts, hooves, tails, lips and brains!!!
Of course they ARE "special"...so there's that.
And what reliable source did you hear it from @Othereeeen ??
I hear a lot of things too, but believe very little of it unless it is from a reliable, proven source.
Not saying they are using 'prime rib' LOL, but I think statements should be backed up!

Just poking fun....I crack up every time I hear the Rastelli guy say the burgers are from some kind of magical special cows....it's hamburger, no more no less!!!
And the mystical "air frozen" chicken breasts....come on now...the climbers who die on Mt Everest are "air frozen"....frozen is frozen....the fibers of the muscle ( meat) don't care...an in my opinion, no chicken breast on earth is worth 21 dollars a pound!!!
So I just figure there must be a lot of leftover stuff that DOESN'T become burger ( it wouldn't be special then, would it?)...and waste not ,want not...sausage !!!
Rastelli never specifies the grade of meat they are pushing on Q, and the reviews are mostly terrible ( look at that 21+ a pound burgers/chicken breast TSV on recently...) ..
I fell for it ONCE. Got some Reserve Rib Eyes that were "reserved" from Y2K( the year 2000)!!!! in the back of some freezer in New Jersey and hauled out for that TSV.
Looked like slices of beef liver, tougher than leather, thin and tasteless.
NOT what was shown on TeeVee, which I suspect were cuts bought from the local Walmart or Wegman's near Q's studio.
It was the ONLY product in decades of shopping on Q that I got my money back, it was that bad. Now when I see their endless showings of thier programs, I feel bad for people who call in and say it's thier first order.
Go to Wegmans or Walmart and get what you can see and pay a TON less for better quality.

OH @Othereeeen !! Thanks or the clarification!
Got ya!
Assumptions, conjecture and speculation!
I have gotten rotten meat at Wally 2x, never meat again from there.
Wegman's is almost every bit as expensive but is top quality IMHO....however, they do not have the selection.
Our local Federal Meat Markets are also fantastic quality meats but priced VERY similar to Rastellis.
My sis lives near Rastelli's market and buys all her meat there.
I have ordered a lot...never a problem and excellent quality which I don't mind paying for.
I'm sorry your experience was bad.

The term is air chilled. It is a more expensive process and produces a better quality product. Most chicken is water cooled. The meat will absorb some of that water and that affects the texture of the meat which in turn affects how the meat reacts with seasonings and marinades.
You're certainly welcome to your opinion the price isn't worth the difference in cost. But to say there is no difference is patently false.

I happen to like him, both on QVC and as a judge on FN. And that mandoline is my lifesaver. I don't even use the pusher and the catcher thingies. I just quit pushing at the last slice, no problems with cutting myself yet.

We like Jimmy Dean's sage sausage when I do eat a real breakfast!

Really like the Goolsby Sausage from Costco. Gret country sausage taste and price can't be beat.

Took half my thumb off w/ a regular mandolin....12 stitches and I have lost most of the feeling in it!
Couple months later...out comes his SAFE mandolin!!!
Brilliant design!!
