I love the taste of rhubarb and have saved this recipe. thank you for sharing. This is our second year of growing our own rhubarb.

Do you think this would be good with other fruits? Fruit suggestions, please as I'm not a fan of rhubarb but love the recipe with the custard layer. Thanks..

I've made this for years. I use 4, 5, even 6 cups of diced rhubarb and mix the rhubarb and sugar together and set it aside while I mix up the cake. (I like rhubarb, so the more, the better, to my way of thinking! If rhubarb is quite tart, use another 1/4 cup of sugar. I also add cinnamon to this mixture, 1/2 to 1 tsp.) I prefer to use half 'n half rather than the heavy cream, but my sister prefers to use heavy whipping cream. I've used other cake mixes besides yellow too. Strawberry is good! Serve with a scoop of vanilla ice cream or whipped topping. Delicious!
