Possibly overproofing? Could be rising for too long at too warm a temperature or both.

I've had that happen, too, the last two times I bought them. In both cases, I put them out to rise overnight and I think that was too long.

I wonder if there is something different in the manufacturing process. I used to bake them all the time years ago and there was never a problem whatsoever. Didn't buy them for years, then tried them twice a couple of years ago and both times they didn't rise well. ?????

Grease them lightly before putting the plastic wrap on top. Sounds like the plastic wrap stuck and messed up the rolls. Also sounds like they over proofed.

I buy Bridgeford rolls, which are very similar to Rhodes.
It takes @ 4-1/2 hours for them to go from frozen state to fully risen (in my kitchen). That amount of time would vary a bit based on room temperature, I would think.
So I agree with the others that the rolls were left too long before baking. It's frustrating when that happens.
