I made the Red Velvet Cake using the recipe forrestwolf posted from the Waldorf Astoria. It turned out pretty good but thought it was just a tad dry. I was afraid to try the one from the Bakerella site since I thought 1 1/2 cups oil is a bit too much. Anyways since they put pudding in some cake mixes do you think if I added vanilla pudding to the recipe it would make it more moist? I did add 1 tsp vanilla & used 2 tablespoons of cocoa instead of 1 tsp. as a few posters said that's what they used. I also did not use 2 oz of red food coloring. I used the AmeriColor soft gel paste. I used about 3 tsp.
