@hopi  I wouldn't buy a set.  I'd invest in a good Chef's knife, see how you like the knife and the brand and go from there.  Get only the knives you will really use.

 

VIctorinox Fibrox Straight Chef's Knife always gets good reviews--8" is standard. They also make sets of kitchen knives with colored handles that work great and are inexpensive for what you get.

 

Wusthof knives are good.  Williams Sonoma carries good knives.  You can check prices with Amazon.  

 

I would spend some bucks to get a good chef's knife, utility style knife, and slicing knife.  They won't let you down.  We have a Mercer Millennia 10-inch bread knife that is great!  Got from Amazon. 

 

I use a Nakiri or Santoku knife a lot because I chop a lot of veggies.  For me, I would invest in a good one.  I use it all the time and at our house it is a great help for the way we cook!  Great for cabbage and other veggies!

Knives.  We bought our daughter Henkel's 44 years ago and they are still going strong.

Expensive but well wortht it.

I have been buying Rada knives, they have a store not far from me so I go there so that I can get the feel of them before I buy them. I have some that 40 years old, I do sharpen them from time to time but they have great hand-feel and I love them and use them as much as the big name knives I have.

Sooner - I say Cutco. They replace them, they sharpen them, they fix tips that

have broken because I dropped a knife point down on the kitchen floor, they replace handles if you damage them because I placed a hot skillet in the kitchen sink where

the knife was....all free, you just pay postage.

I agree with @We rescue cats about using Rada knives.  I use mine daily and I also bought their inexpensive sharpener to keep them razor sharp.  It only takes a few swipes between the metal disks to sharpen them.  I bought some knives at county fairs, church fundraisers and from the Rada website.  I own a set of Cutco knives, but the Rada knives are my preference every time. They are a bit lighter to use, but tough enough to do every task. I am not sure, but I "think" that they might have the narrower angle on the knife edge, which makes it a sharper cutting edge, but not quite as durable.  Since most of my knives are decades old, they are durable enough. Smiley Wink I only have 2 with a serrated edge for occassional use because I don't know how to sharpen them.  I prefer the straight edge on everything except slicing a loaf of bread.  I bought my knives individually according to which ones I like to use.  I am not fond of sets that leave me stuck with knives that aren't needed and wasting space in a drawer.

As someone mentioned, I would consider not getting a set unless you are planning to use all those different knives.  I would get two or three of my favorite kind of knife, a paring knife or two, and a bread knife.  I have no use for a fillet knive or whatever else they put in those "sets."

I have had my Cutco knives for almost 50 years. When my first husband and I were splitting up our property prior to our divorce, the knives were the first thing I asked for when we got to the kitchen stuff. Never regretted that decision. I still use those knives to this day.

  I remember we financed them for a year thru the company. I bought a big set. The only piece I no longer have are the scissors. About 30 years ago I took one of the paring knives to a picnic and never saw it again. So I replaced it.

  I can't even imagine what the set I have would sell for now.

My Son, A professional chef, recommended Global Ikasu knife set. They're currently $299.95 on Amazon but the middle of last Summer we got A deal at $150(they go and down all the time). They are sharp, beautiful and come in a clear plastic block.

@patbz I have one mid-sized Global knife and I agree it is a great knife!

We bought Victorinox knives at the Restaurant Supply store downtown years ago. We have bought more online since the restaurant supply store closed years ago.

DH has 2 different sizes of their Granton edge slicing knives. He really likes those. I like to use their 8" chef's knife. I don't like large knives.
