Rachel Ray Knives with Sharpening Sheaths

What's the difference between a chef's knife and a santoku? There are two RR knives with shapener sheaths offered by QVC and the descriptions sound like either one can be used for everything. I'd like to buy one as a gift for someone, but don't know which knife would be the most useful.
