ROASTED VEGETABLES

I am looking for a Great Roasted Vegetable recipe. Does anyone have one that they will share with me? I had one the other day at a restaurant that had squash, zucchini and butternut squash. It was delicious! Smile I have no idea if they used a spice on them or just used salt, pepper and oil. I know it had a wonderful flavor. Looking for new ways to introduce my husband to vegetables besides corn, green beans and mashed potatoes!
