We are not diabetic, but I never use a bottom crust. It's just more filler, more carbs, more whatever and we don't make it.

Whenever we have roast chicken, I always make sure we have enough leftovers for a nice chicken pot pie, with the chicken, potatoes, onions, carrots, and peas. The original recipe that I had called for chicken bouillon cubes for the filling, but since I usually make gravy for our roast chicken, I make extra gravy, so that I have enough for the pie, too.

Sometimes I cheat and use a refrigerated pie crust for our top crust (depending on how much time I have). But most of the time, I will use baking mix for the top crust of the pie. Sometimes I roll it out and place it over the casserole; sometimes, I drop it dumpling-style over the chicken filling. I guess it depends on what kind of mood I'm in.

I also like to make individual Yorkshire puddings or flavored popovers. And make just the chicken filling. Then I'll split the popovers or put a nice portion of pudding on a plate and ladle the chicken filling over the popovers or pudding. That's really good, too. I have a recipe for Onion Yorkshire Puddings and will sometimes use the chicken filling over them.

I like to make Cornish Pasties, too, which are like a beef pie. Pieces of beef with potatoes, onions, mushrooms, and carrots. And a red-wine sauce. The crust is placed onto the baking sheet, the ingredients are placed on half the crust, then the crust is folded over the beef to make a half-moon. Baked and served with the wine sauce. It's really good and my DH just loves them. They are very filling with a salad on the side. One is enough per person, maybe even half of one per person.
