Tonight I'm making Merideth's recipe for Pressure Cooker Manicotti. So excited! Hope it's as good as I'm hoping. I'll let everyone know how it turns out!

And do post the recipe. The words "manicotti" and "pressure cooker" are intriguing. My mom makes her own crepes for manicotti and are they ever good. (She's a stellar cook, Mom is, even at age 88.)

I googled the recipe. Merideth Laurence Pressure Cooker Manicotti. It came up on a site called In a Pinch. I added a combo of ground beef and ground turkey to ours that was seasoned with garlic powder, black pepper, salt, and dried minced onion. They were good and got good reviews from my son and husband. The recipe made 14 manicotti. We ate eight of them. We will have leftovers for lunch on Sunday after church. I only served garlic bread with them tonight, but will serve a salad on Sunday.

Thanks! You helped me find it and I think I'll make it tomorrow. I have to work (wasn't planning on that, oh well) and it will be great as a make-ahead for Sunday and Monday.
