I am making a 7 layer salad for Easter lunch, can I cut up the celery, green pepper and onion on Thursday or it that to soon...

I have several things on my plate for Saturday and would like to get the cutting up out of the way early.

I'd personally wait until Saturday.

celery will be fine

onions will weep

Agree! Although I think the cut edges of the celery might get a little old looking.

true, that's when you need to figure out the stuff that can be done days ahead vs day of

I have never prepped raw veggies earlier than 24 hrs. before hand.  That is one of the things I prefer to get done early especially at Thanksgiving for the dressing and such.

I am going to do my Fruit Salad and Veg. Pasta Salad on Saturday but none of the items will be cut up before Sat. afternoon.  Happy Easter.

I agree to prep on Saturday and make sure to store each in their own separate container.

@Mom2Dogs:  This 7-layer salad is one of my favorites having made it an awful lot.  My experience is that is so much better if you make it the day before you serve it, combining all of the ingredients where they "meld" together.  I have made it the day of an event but like it so much better when made the day before.

@Hoovermom....I agree, I just wanted to prep a bit early but won't cut veggies until Saturday.  I love 7 layer salad, I took it to a dinner 2 weeks ago and it all but gone by the end of the evening.

I want Easter dinner to be stress free...so I am serving items that can be made the day ahead.
