@Boehm Collector - I make a potato dish that calls for instant potatoes a few times a month. My favorite has always been:

We stopped purchasing potatoes on a routine basis once the diabetes diagnoses came.  Although, I used to have potato starch......Jaque Pepin uses it as a thickening agent rather than cornstarch.

DH loves these, a good shortcut when I'm not feeling the urge to be a from scratch cook.
