I remember OreIda. And I remember my mother making quick mashed potaoes with them.

Subsitute milk for water to make them taste richer.  Some use chicken broth.

I keep a box of Idahoan plain on the shelf to thicken soups and stews instead of flour.

 

If you don't use them often, pick up the plain variety instead of flavored varietes as plain offers a much longer shelf life.

 

The added flavorings, butter, etc shortens their shelf life considerably.

I use whatever is just potatoe flakes with no seasonings--use them to boost the flavor of mashed potatoes and are good as a coating too.
