Polder Thermometer/Temperatures

I purchased the Polder BBQ thermometer Q had because it has a longer probe than my other one, not so much because of it's preset doneness temperatures. When you turn it on, the first temp. that appears is the target temp. of what ever meat has been selected, then it goes to the present temp. Poultry reads as 180, which to me seemed high, I checked my other thermometer and it list on it's cover 165. So I checked threw some of my cookbooks, some do say 180 while others say 165. Red meats vary too, in some cases this thermometer reads low, sometimes high or right on. (I have one cookbook that list red meats from rare-120 to well done at 140.)

This thermometer will continue to read the temp. even after the target temp. has been reached and the alarm sounds(you can then turn the alarm off), but I wish it had a setting where you could just turn off the presets and have it be just a straight thermometer, which is really the way I'm going to use it.
