After tossing many cookie sheets I switched to the Sam's and use them for everything. I always line with parchment when I bake.

Does parchment paper have a temperature limit? Mine scorches at 400 degrees. I guess I should read the box![]()

I just read the box of my Reynolds brand parchment paper and it said 'safe to 420F'. HTH ![]()
I don't know what the highest temp I've used, but that should cover pretty much anything with which one would use it in the oven.

Just remember full sized sheet pans are 18x26 and don't fit in most home ovens. Do not buy restaurant size full sheet pans unless you know it will fit.

That's a good thing to know. I go with 18x13" for the large ones and they fit in my regular oven. My convection oven only goes up to 13x9", so I use that size in mine. All of my sheet pans are the Chicago Metallic Commercial II line - nice, heavy aluminized steel pans. They last forever.

Plus, you don't want anything that is going to put your pan too close to the walls of the oven. Then you'll gett stuff cooking hotter on the edges.
I have this problem with my half sheet pan that I use to make Ina Garten's brownies.
It seems fine for cakes as they don't cook as long or are not as dense as brownies but I find the brownies burn on the edges in that pan. I even wrap the pan with the wraps that you soak in water first and they still burn.
I started making that recipe in 2 pans.

Yes, the 18x13 are 1/2 sheet pans which is what I use also. I have a few quarter sheet pans (13x9) for the toaster oven.
