We use almond milk. I have some avacodos to use. What suggestions do you have to these? I'm thinking of a dip, but don't know how yet.
Also, I'm concerned about getting enough protein in this food plan. We've had salads and roasted veggies with some tofu.
For those on this plan, do you count your grams of protein?

My husband already noticed that the Neuopathy in his foot is either gone or anyway, it feels normal now. It felt rubbery when he would rub it, but no feeling in the foot. Now yes.
Today on Mother's Day he's making a chicken on the grill.
Once in a while we will have meat, his doctor said we should be on this 75% of the time and we are. Yesterday I made a lentil meatoaf, and there was a lot of steps to it, it was good, but took a long time to make. A hamburger meatloaf would have been much easier. If anyone wants that recipe I used, I'll post it. It made a huge batch, I had to use two loaf pans. He made a black bean dish in the crock pot, and that was good and easy too. Now we have something to serve my vegetarian daughter when she comes over with her family tonight. Her husband will eat chicken. He gets enough vegetarian foods. The twin girls are 8, they are Autistic and very picky eaters. I don't know what they will eat. One likes mac n cheese, the other hates anything with noodles!! Weird!

@gloriajean when you posted a similar post under recipes, I recommended the Bob's Red Mill farro veggie burger. It is really good and can be made on the grill but could possibly crumble. It has beans, spinach, etc. You really should try it. We don't eat beef, very little pork and little chicken or turkey. We have fish twice a week and mostly plant based foods. I also use Barilla high protein pasta with marinara sauce, no meat. Eggs are also a good source of protein either fried or scrambled or egg salad. I wish you and your husband well. Oh I also made stuffed peppers with quinoa. Quinoa is high in protein and can take on lots of flavors, just make sure you rinse well.

m0rgan, thanks tor that recommendation. I wrote it down. On Tuesday morning I'll be going to Trader Joe's in a town an hour away and plan on getting some things like that. My younger daughter will be picking me up to take my older daughter to her Oncologist to get the next steps she has to take after her breast surgery. Two tumors were taken out and they had cancer in them, she is cancer free now, but proably needs radiation, and was told maybe even more chemo. Hope now. She's been thru a lot. So atter her appointment we'll go to Trader Joe's. We don't have that store inour town.

Whole amaranth is a staple in my diet (along with quinoa). The nutritional profile of amaranth is so good. Some people say if you eat it everyday then you don't need to take a daily multivitamin but I still do anyway.

I don't eat red meat or pork. I eat very little chicken and Turkey but I do eat a lot of plant based protein foods. I have grown to love them,

We eat a very plant friendly diet, but do have some lean meat, and some whole grains.
The thing I think is really important is get a good app that tracks what nutrients you are getting--especially protein, calcium, fat, fiber etc. That way whatever you do you have a picture of what health benefits you might be missing.

@SilleeMeeI am familiar with quinoa and make it often, I have never made amaranth though, how do you use it/cook it? I looked for recipes but there wasn't much info out there besides making porridge out of it.

There's quite a bit of info out there about amaranth and how to cook and use it in recipes. Not sure where you're searching but I googled it and found plenty.
Amaranth is a grain so basically use it to bake with, use it alone as a side or combined with other ingredients. Martha Stewart dot com has an amaranth page about cooking it and how to eat it. Good place for starters.![]()
