My Southern mom made pimento a lot and I grew up on it. It's cheaper to make than buy at the grocery store and I had to experiment with recipes. I found the more simpler recipes to be the best. Recently I took pimento to a social gathering and served with pita chips. A huge hit.

My Southern, N Carolina mom, also made buttermilk pie and banana pudding with vanilla wafers. I still can't make those as good as she did.

I used to make buttermilk pie for my dad- Love it! sometimes I made a rhubarb sauce to pour over it...

8 oz loaf cheese spread cubed (like velvetta)

8 oz sharp cheddar shredded

8 oz mild cheddar shredded

1 cup miracle whip (not generic)

1 jar (4 oz) diced pimentos, drained

1/8 tsp pepper

3 tbsp sugar

Mix with mixer......Makes 4 cups
