They're delicious! My mother always included them in her beef roast. She sauteed them in a little butter first to tenderize them, and then added to the roast with the potatoes and carrots.

i always put rutabaga, in my beef stew, but next time, i'm going to swap it out, for parsnips. Maybe my hubs won't complain, so much.
