You can buy blueberry balsamic vinegar at many specialty stores. My grocery store has a specialty section with all kinds of flavored balsamics. You can also find recipes to make your own, but I buy mine. I like mango.

In addition to what ChynnaB said, I picked mine up from Marshall's.

Chop your veggies into big chunks (they shrink some under heat), add a tablespoon each of vinegar and olive oil, mix well, place on a baking sheet or roasting pan large enough so you have one layer, roast at 450 for 20 minutes, add garlic, stir and roast for 15 - 20 minutes. The edges of some vegetables will be charred.

Good! I will have the tested recipe for you by 12/23. That's when I bring the dish for a pot luck at work.

I'm making the first one this weekend, and DH and his football buddies will be the original test subjects.
