Please go back to my stuffed meatloaf thread and read my reply to you there about diabetes, which I do not believe you have read yet as you did not reply, which you usually do after reading all replies.

I believe it has some information which you may not yet be aware of and I listed my knowledge since my beloved multiply disabled Mom had diabetes for 30 years....I hope what I listed also helps you.

Also this is a very nice diabetes recipe web site I listed for you below, and there are others out there too, so take a look using Google search and you will find many recipes for diabetics.

Thank you my friend for taking the time to post. I did read your post: it is so sad what your mother went through. There have been so many breakthroughs and so much has been learned about causative factors. While I was in the hospital, I was on insulin but mercifully, I don't need to take it. I am on a oral hypoglycemic and I am doing splendidly!Smiley Happy Smiley Happy. I am compliant to the point that I weigh and measure food....and I do the best that I can in the exercise dept. ( I need to have both knees replaced but I'm putting it off until I'm a little older). The diabetic diet I am on is not so bad either: before this happened, I was cooking with fresh food to begin with. I have had to make changes, but I can live with them. Portion control is a must as is knocking out refined carbs. That is all ok, because I am adding to my body of knowledge when it comes to healthy cooking with a wide variety of foods. Let's take your meatloaf for example. I will have to use ground turkey or chicken and know how much feta I am using, and then I will have to calculate protein, carbs- and what constitutes a serving. Stuff like that doesn't intimidate me. I love to cook, and I don't have to give it up.....and the bright side? Over the years, I gained thirty pounds and almost 20 are gone! There is a possibility that I will need insulin one day, but I am hoping that changes I am making will prevent that....believe it or not, with the mention of the baklava cheesecake, the wheels in my head started turning about how to make it diabetic friendly....it won't be quite as decadent, but the flavor will be there. There are millions of low fat low carb cheesecake recipes.....and for the baklava portion? A very long time ago, I saw Graham Kerr crumble up a couple of sheets of Phyllis dough. He misted it with oil, sprinkled crushed nuts (roughly chopped),drizzled honey on it and baked it.....so there we have it! Diabetic eating does not have to be dull! Thank you for your concern my dear friend and enjoy the warmer that's coming. I am watching The Weather Channel and it looks as if a warming trend is on the horizon! Thank you for your kind reply, and yes my Mom suffered a lot throughout her lifetime, but she kept pushing and praying to stay with us as long as God allowed.

You are well versed in what is required as a diabetic, and that is wonderful as so many people cannot grasp all it entails and someone must prepare their foods and watch over them carefully.


I always improvised and made sure I cooked diabetic friendly recipes for my Mom including many of her Greek favorites, which had I not improvised she would have never tasted that food she loved again.


Cheesecakes can be made in a variety of ways these days so there is less sodium, less fat content and more health to them and as for the phyllo you can use less sheets or even tear them into smaller pieces and place them where you wish. I used to tear them into smaller pieces to fit a pie pan and then make my Mom her favorite Cheesecake, or Spinach cheese pie, diabetes friendly and certainly more healthy.


Ahhhhhh I think Spring will finally say hello very soon.

Looking forward to more bbq’s and pool parties. I have missed doing entertaining for a large group, and welcome the change as well as being outside and enjoying the elements and great company.
