Please go back to my stuffed meatloaf thread and read my reply to you there about diabetes, which I do not believe you have read yet as you did not reply, which you usually do after reading all replies.
I believe it has some information which you may not yet be aware of and I listed my knowledge since my beloved multiply disabled Mom had diabetes for 30 years....I hope what I listed also helps you.
Also this is a very nice diabetes recipe web site I listed for you below, and there are others out there too, so take a look using Google search and you will find many recipes for diabetics.

Thank you for your kind reply, and yes my Mom suffered a lot throughout her lifetime, but she kept pushing and praying to stay with us as long as God allowed.
You are well versed in what is required as a diabetic, and that is wonderful as so many people cannot grasp all it entails and someone must prepare their foods and watch over them carefully.
I always improvised and made sure I cooked diabetic friendly recipes for my Mom including many of her Greek favorites, which had I not improvised she would have never tasted that food she loved again.
Cheesecakes can be made in a variety of ways these days so there is less sodium, less fat content and more health to them and as for the phyllo you can use less sheets or even tear them into smaller pieces and place them where you wish. I used to tear them into smaller pieces to fit a pie pan and then make my Mom her favorite Cheesecake, or Spinach cheese pie, diabetes friendly and certainly more healthy.
Ahhhhhh I think Spring will finally say hello very soon.
Looking forward to more bbq’s and pool parties. I have missed doing entertaining for a large group, and welcome the change as well as being outside and enjoying the elements and great company.
