I was darn so close and burnt my strawberries.....watching the thermometer so closely I failed to stir the kettle and sure enough the bottom of the kettle was full of burnt berries.

I thought, wait, just dump the remained in a jar and toss the bottom of the kettle...wrong, horrible taste to burnt strawberries that the entire batch went into the trash.

What's the secret to making the perfect jelly/preserves.......I keep trying and everytime I want to make a batch, something different happens...(doesn't jell, burn etc)
