Good morning all. Thought some might like to see this recipe. I made it last week after seeing it and it turned out quite well. If anyone will be at your dinner whose diabetic or just dieting, this would be a great alternative for them. I tried it out on my diabetic neighbor and also on my next door neighbor who is dieting. They both asked for the recipe and are making it tomorrow.
PUMPKIN DELIGHT
1 15 oz. Can PURE pumpkin-no pie filling pumpkin-I used Kroger Brand
1 regular size box vanilla sugar free instant pudding-it's the smaller box
1 8oz. carton Cool Whip FREE
1 tsp. pumpkin pie spice
1/2 tsp. cinnamon
1/2 TBS. Sugar Free Maple Syrup
Mix all well with hand mixer or stand mixer. Takes a bit to get it all mixed as the pumpkin is so dense. Make sure it's mixed well. Divide into 4 servings.
Abt. 65 calories per serving and of course sugar free except for natural sugar that is in the pumpkin.
This can be doubled.
