This year with the cost of beef so high, I decided to make my lasagna for Christmas dinner.  I also put together a Kalamata and Mediterranean Green Olive bread served with EVOO with Italian spices for dipping.  For starters we had Shrimp Cocktail, Deviled eggs and a Caesar Salad..  Didn't miss the beef at all!   Dessert was Cherries in the snow..a little bit of heaven!20251225_155044.jpg20251225_153843.jpg

@ciao_bella I think you are Italian like me?  Love your pics.  We have 3 Christmases.  One w/one son's fam, another w/daughter's fam and tomorrow w/just us adults sans all the little one's chaos and joy that we love.

So we adults always have lasagna, salad, pepperoni/cheese and garlic bread  in honor of my parents and my kid's grandparents who have long gone to Heaven.  Brings tears.  Merry, Blessed Christmas!!

@ciao_bella   I went with homemade pasta sauce with spaghetti and/or penne and homemade meatballs this year for Xmas dinner.  We had salad and bread too, but that olive bread sounds great!  I'm not good at lasagna.  It always falls apart.

my family loved the pasta idea!

I know one key to a stable lasagna is to let it rest for a good 20 min or so to cool down some  after baking before slicing in to it.

@LizzieInSRQ  Better yet, let it rest at least 30 minutes but more like 45 minutes for easy cutting.  It allows the lasagna to 'tighten up' for lack of better words.   Don't worry about it not being hot enough at 45 minutes.  Trust me, it takes a long time for it to cool down and seems like forever for it to cool enough to put any leftovers back in the fridge.

@LizzieInSRQ   Thank you... that's very nice of you.  Honestly, you just might like the olive bread.  In additon to the olives, it has dried Italian seasonings and garlic powder in it as well.

@Patriot3  Lol... how did you guess the Italian blood runs through my veins as well!..  Sounds like you have the best of worlds celebrating three Christmases!   My Italian mother was a wonderful cook.  I learned a lot from her, starting from my childhood.   Happy New Year!  As we say in Italian...'Salute'
