Orange slices in punch

Occassionally I'll see punch with orange and lemon slices floating in it. Looks really pretty. I did that for a party last month and it turned the punch really bitter. I know the white part is suppose to be bitter but I've seen it done before so what am I doing wrong? I'll be doing a punch for a halloween party and don't want to make that same mistake but also want it to look pretty.
