OIL AND VINEGAR DRESSING ?

I'm looking for some good oil and vinegar dressing recipes. I know it's a matter of taste figuring out the ratio of oil vs vinegar, and I usually add too much of one or the either!

DH gave me a beautiful box of flavored olive oils and balsamic vinegars. Besides drinking them straight up...(they taste that good!) I would really appreciate some favorite recipes.

What else do you use your balsamic in?
