Nutty Couscous Salad for Spring

Now that its warmer- (well, dang hot here in Southern California) I thought I would share this

NUTTY COUSCOUS SALAD

1 10 oz pkg cous cous(unflavored)

1/c cup dates, chopped

1 bunch parsley

1 lage orange

2 TBL Olive oil

2TBL Cider vinegar

1/2 tsp sugar

1/4 tsp salt

1 cup dried currant or dark raisins

2 Tbls chopped crystalized ginger

1 6-oz can salted cashews (whole or coarsely chopped)

Prepare couscous according to pkg..Chop 3 Tbls parsley (reserve remainder for garnish). Zest orange peel and squeeze juice from orange. In bowl, mix OJ, salt sugar, oil and vinegar- Toss with couscous, cashews, dates, chpd parsley, currants , ginger - mix well and garnish with parsley..

8 side dish or 4 main dish...

Sounds good Mothertrucker! Would it also be good with the larger Israeli couscous? I will have to try it both ways.

I really like Israeli couscous, but I have never tried it that way- I should! Might especially be good if you are using it as a main dish, which I sometimes do...have also made it with bulgur wheat-

Sometimes I add a chopped shallot or sliced green onions too, makes it a little more savory..

I have also served it in hollowed out orange shell "cups", makes a nice presentation...

As I sit here at my desk...with my coat STILL on since it is freezing out...dreaming of your warmer weather...

I sure think so!  I love Israeli couscous from Trader Joes, also the Israeli crumbled feta they carry.
