November 2020 - What's cooking everyone?

To start this month, Pooky1, we truly miss you and hope all is well.

 

Hope all did their Hallowe'en thing whatever that may be. Today my 3 year old great great Anthony celebrated his 3rd Birthday. I think he was bored silly. Can you believe they got this huge jumper - Spider Man - and he would not go in and play. Well so much for that.

 

Have not done much cooking lately -

 

We have had some very warm days lately but the nights are still Brrrr.

Typical fall day here in WV.   Hubs and I are home alone and kept it simple with slaw dogs and fries for lunch.

It has been cold and snowing today. Glad that yesterday was nice. Made spaghetti with Texas toast and a salad tonight.

Much cooler and very windy in the St. Louis area today - the leaves are coming down like crazy. It was an easy cooking day for me (like most days)....a couple of pork chops in the slow cooker, some store bought mashed potatoes, veggie, and some Robert Rothchild's jarred cranberry sauce. I'm all into easy cooking.

Getting up to 93 on Thursday and then the bottom falls out - we start freezing. That is Sou Cal for you.

Have been having a health issue, so not a lot of cooking here.  I made a small pork roast in the crock pot a few days ago.  We had that with salad and roasted potatoes the first night and then sliced on a bun as leftovers.

 

Tonight we had breakfast for supper.  Mr 4kitties had a homemade egg McMuffin and I just had scrambled eggs.  

I have another bag of cranberries I need to cook tomorrow.  We love homemade cranberry sauce.

We’ve been following the keto way of eating since June of last year. Last November, I still hadn’t collected many recipes. What a difference a year makes. I’ve been trying an assortment of desserts so I can decide which ones to bring to Thanksgiving. Today I decided to make DH some chocolate chip cookies bars (my first time with this recipe). They came out good and he was happy. A couple weeks ago I tried a crust less pumpkin pie. Last week it was carrot cake cupcakes with cream cheese frosting. Later this week I’ll try a different pumpkin pie recipe with a crust. I still haven’t ruled out my favorite coconut cream pie. Decisions, decisions. 😊

We used the last of our keto granola today so I’ll make a new batch in the morning.

 

ETA - the pumpkin pie with a crust wasn’t horrible but it needs work. The recipe made a normal size pie and provided 8 servings.  The level of spiciness was lacking so it was kind of bland but the filling consistency was very good.  Almond flour burns easily.  That happened here too.  The rim crust got super dark and really hard, even with foil covering it.  If I try this one again, I think I’ll only put the crust part way up the side of the pan an not have an actual rim. 

 

Even though its not traditional, I still keep goin no back to considering coconut cream pie.  I already know that recipe is killer.

I only cook, like, once a week. Today is roast beef in the crock pot, which I put on low overnight and then we'll have it for lunch.

 

My SIL's recipe, but some of my own, too...

I think he uses every dried herb & spice in the cabinet (and he has a lot!) I mix them all up in a little bowl, then rub onto the meat:

 

oregano

S&P

turmeric

apple pie spice

all spice

garlic powder

coriander

cumin

rosemary

bay leaf

 

About a cup and a half of beef boullion, 1/4 cup or more of balsamic vinegars (I used pomegranate and raspberry - the ones from Seasons Taproom, as the regular ones at the store are too yucky) and about 1/2 cup sherry.

 

Also threw in an onion for added flavoring.

 

This makes the best gravy to serve on the meat, and also mashed potatoes. I only do mashed a few times a year. This is one meal where the gravy is so good and the potatoes are a special treat.

Today is DH's birthday and he has requested we have hot dogs, sauerkraut, baked beans and mac and cheese.  I already made him a chocolate cake.  He has been on WW so this is a special treat for him

ninjawife = hot dogs sound like a great Birthday meal. I would ditch the sauerkraut and slop it up with mayo however. OK, so I may be weird.

 

Still not able to do a lot of cooking at my house either but yesterday did fry cabbage and had some orange chicken as go with. I LOVE fried veggies. I think that is the southerner in me.
