Just found a cookbook "The Egg-Free Cooknook" by Tabitha Elliott. Many egg free recipes for main dishes, sides, and desserts.  I also have Bob's Red Mill Egg Replacer on hand for baking.  Also found several tips for replacing eggs in baked goods on the internet.  Where there's a will there's a way.

I was just in Trader Joe's.  Large eggs were $3.49!  And plenty of them.  I was pleasantly surprised.

No problems with eggs here.  I ordered groceries this morning.  Large brown eggs were $3.79 a dozen.  Eggs are healthy so I would never leave them out of our food plan.

It's funny how some people rely on what's considered "the basics" more than others.   

 

Honestly, I didn't realize how much people relied on eggs!   I'll have an occasional omelet, and occasionally make a small batch of deviled eggs, but I usually don't have any eggs in my fridge.

 

I stopped drinking milk decades ago.   I stopped when I read that humans are the only mammal that drinks another mammal's milk.   Milk is for babies.

 

JMO, of course.

To me eggs are a superfood. Most mornings I eat at least two eggs - usually scrambled with a little salsa and sourdough toast.  They're a great source and protein and vitamins. Love my eggs.

@simplyfriends @Scrambled eggs with salsa is the absolute best! Never had them together, until we went to Disney one year and stayed at Coronado Springs. I tried them there for the first time and it was love at first bite.
