When you're tired of cooking, what do you eat that's healthy?

I can't eat any more fruit! 

I've had enuf!

I love a fresh spinach salad, with sliced mushrooms, some chopped hard-boiled egg, and a light vinegarette dressing. In season, I'll also add some sliced strawberries. Yummy!

For a break we pick up stir fry that's heavy in vegies, or do a white pizza with extra vegies.

 

He won't eat a salad with a protein on tip.  Salad with a meal is no problem.

just made French bread basted with Oiive oil from King Arthur. Man, whole house stinks of garlic hahahhaaha

Salads, you can buy steak strips already marinated to add to the salad, shrimp, ham slices,eggs.  We eat rice with veggies and use the same steak strips for the meat.  Just a couple of ideas, hope it helps.

Fruit is not that good for you anyway unless you pair it with protein.

Mom had it right to give us peanut butter &  jelly sandwiches back in the day

 

 

Variety is best, a little fruit, a little protein, lots of veggies--cooked or raw.

Try to mix colors-- yellow, red, green, etc.

 

All of the above suggestions are good.

My go to is a sandwich, there are so many interesting breads & wraps available now or use lettuce leaves. A little turkey, a slice of cheese & lots of veggies is my favorite... it's easy & filling.

How about veggies with hummus? I LOVE cucumbers and hummus. And if carbs don't freak you out, cut up some naan to eat with it. Tuna in  tomatoes  is good too, or on crackers  or make  mini pizzas on triscuit crackers.  Avocados on toast is yummy. How about deli turky spread with cr cheese wrapped around a dill pickle. Hard boiled eggs are good too. Just watch the amounts you eat.

  • 1 (17 ounce) container 2% Greek yogurt
  • 3 tablespoons mayonnaise
  • 1 tablespoon agave nectar
  • 1 cup finely chopped kale
  • 1 cup finely chopped spinach
  • 4 scallions, finely chopped
  • 1/3 cup water chesnuts, finely minced
  • 1/3 cup red bell pepper, finely minced
  • 1/3 cup carrot, finely minced
  • 3 cloves garlic, finely minced
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dillweed
  • 1/4 teaspoon freshly ground black pepper

Combine and fridge for few hours.  It's a copycat recipe of TJ's kale/spinach dip.

I keep a container of cup up veggies in the fridge, but it's good with crackers also - I like those littlle square wheat ones.

I also add a little hot sauce or red pepper flakes to my dip for a little kick.
